In addition to catfish, a good balyk is obtained from carp, grass carp, silver carp – it is better to take a carcass of at least 8-10 kg.
We cut the carcass into a couple of balyks along the ridge.
Fill the balyks in a dry way, placing them tightly in a container. Salt at the rate of 45 g / kg. We place the container in a cold place for 4 days. Drain the released brine and rinse the balyks with dry white wine. Sprinkle with dill seeds. Let dry in a cool place until the surface dries. We smoke in two sessions with cold smoke for 5-6 hours with a break for rest up to a day. We withstand another day after smoking in a cool place.
