Boiled jowl

Jowl is soft and flavorful when cooked with spices.
Two pieces of jowls piece with a layer of meat are folded to each other with the skin outwards and tightly tied. Cook for 1-1.5 hours until the required softness, adding salt, a little vinegar, bay leaf, allspice to the water. We take out the cheek, cool. If you wish, you can smoke it cold.
Store wrapped in paper in the refrigerator. It is not a shelf-stable product. After cooking, the individual pieces can be vacuumized and frozen. When frozen, boiled cheeks can be stored for up to two months without loss of taste.
