For work, you need a good chef-type knife – 20-25 cm or santoku, as the main one, and any knife with a short hard blade for removing meat from bones and other cutting operations. You will also need a hatchet (cleaver), which can be used both for slicing large pieces of meat and for chopping meat. Minced meat prepared in this way has better qualities than ground meat. It is better to purchase a chopping board more, glued from the ends of a hard tree. Such boards are practically indestructible, it is easy and convenient to work on them.
Electric meat grinder, power not less than 2 kW. In addition to lattice knives with large and small holes, which are usually included in the kit, it is advisable to purchase an additional trimming lattice knife. They come in different types – with three holes or six sectors. It is convenient to prepare minced meat for salami using just such a knife – coarse chopping of meat with good binding. At the same time, the meat is ground quickly with a low load on the grinder mechanism.
You will need a mortar to grind the spices. It is better to grind pepper, nutmeg, coriander just before adding it to the minced meat or to the curing mixture. For grinding spices with hard, fine grains, such as Sichuan pepper or fenugreek seeds, it is convenient to use a hand grinder with an adjustable grind.
